When antioxidants administered in isolated forms they are quite often underperform in comparison when they consumed as a part of food. This could be explained by a number of reasons: loss of the food matrix, which can buffer stomach pH and affect processing by intestinal microbiota, loss of chaperon molecules which are important for antioxidant absorption, transportation and metabolism.
New delivery technologies designed to address these issues could be a solution for effective antioxidant supplementation. Validation of this approach will be illustrated in this presentation by results from clinical studies.
